Laura Veal Presents Her Winter Cocktail List At The Botanist.

This May we launched our new cocktail menu, designed by our cocktail expert, Assistant General Manager, Laura Veal.

Laura is a long-time Applejack legend. Starting her hospitality career at SoCal Neutral Bay as a bartender, Laura then made the move to The Botanist, working her way up to Bar Manager and now Assistant General Manager. Laura’s love and passion for cocktails at The Botanist has seen her create our latest signature cocktail list for the restaurant.


From spicy margaritas and rosemary negronis to a sustainable odd bunch spritz; there’s something for everyone! Plus you may spot some old Botanist favourites we just couldn’t replace, check out some of Laura’s favourites below and make sure to join us at the bar for a drink or two.

Spicy Coconut Margarita

Who doesn’t love a spicy margarita in Winter?

Made with Red chilli and coconut oil Olmeca Altos Plata Tequila, Feels ‘Vivify’ Eau de Vie, agave, lime

Rosemary Negroni

A little twist on a classic, botanical and strong.

Made with Del Maguy ‘Vida’ Mezcal, Rosemary Campari, Sweet Vermouth

Odd Bunch Spritz

Sustainable and refreshing, this spritz is made in partnership with Sydney Direct Fresh Produce using odd bunch fruit (unwanted or odd-shaped fruit). This drink will always change depending on the variety of the fruit.

Made with Beefeater Gin, Elderflower, Sydney Direct ‘Odd Bunch’ cordial, Prosecco & soda.
